Not fussed about pairing (other than not being especially sold on Harry/Marcone), but am perfectly happy with any/none.

Wizards can change sex/gender, more or less at will. It's a natural thing for them to do, as much part and parcel as the Sight, say, but changing does take it out of you to varying degrees. Maybe it uses up some of your magic, maybe it's just physically exhausting, maybe you need time to adjust to how your chakras are aligned, but maybe also wizards might find particular magics easier when they're particular genders-- Wizard A might might find catching sunlight easier when they're being female because their culture/language has the sun as feminine, Wizard B might find it easier because it's masculine in their culture's symbology of language's grammar, etc. So even though they can whatever they want, there is a cost/benefit in switching, that maybe changes wizard to wizard.

Magic works a lot on symbol, in ways that are kind of defined by culture and belief system (male priests of a goddess dress as women for their rituals, for example), as well as personal stuff, as well as people's own mindset. Maybe some spells do need you to be a particular gender, or

Bonus points for: magic is not a monoculture and not all wizards are the same. Different cultural hang-ups, different ideas about what's feminine/masculine, different levels of comfort or ideas of self, maybe some people switch pronouns when they shift, some people keep to just one, or their personality does change when they shift, so act more "guyish" when they've got a cock (culture! Hormones! People identifying more with the stereotype they're reminded of!).

Double bonus points for: Personal stuff! Molly was raised catholic in a family with a dad that worked outside the home and hunted bad things, and a mum that worked in the home, defended and made her husband's armor! Harry and Ellen were teenagers that experimented together! Harry can recognise his father in himself when he looks in the mirror, but has no real memories of his mum for that! Carlos! Ancient Mai! Merlin!

Triple bonus points for: Fun With Symbology. Of all kinds. Well, I'm a virgin the sense that I've never done X as Y, this spell has a motherhood concept, this bargain is being made with the Lord of The Hunt, etc.
